Purchasing Meat and Game
The chicken breast is one of the most widely known cuts of meat on the chicken when carving. After the chicken wings and thighs are butchered of, the breasts are cut down right through the wishbone.
The boneless chicken breast is the piece of meat that I decided to pick because it is the one I am most familiar with. Since I didn't want to just get the chicken breast I bought the whole carcass for $12.00 so I could maximize the number of portions I can get like the drums, thighs oysters, etc and freeze the other parts for later use. One of the reasons why the chicken breast is one of my loved piece of meat to cook because it is so versatile yet so delicious. You can pan-fry it, put it in a stir fry, grill the chicken, etc.

Chicken Parmesan Recipe
1 Skinless chicken breast
100g crushed tomatoes
1 cup of flour
2 egg yolks
250g breadcrumbs
10ml olive oil
1 sprig of thyme
half an onion
2 cloves of garlic
300g spaghetti noodles
mozzarella and parmesan cheese to taste
salt and pepper to taste
- dip the chicken in flour, egg wash, and bread crumbs allow to cook when ready
- star sauce by sweating onions and garlic, add tomatoes and herbs, cook slowly until the right consistency
-pan fry the chicken until golden brown, before placing into oven, finish with mozzarella and parmesan
-cook spaghetti until al dente and plate along with tomato sauce
